There are two types of sushi sets – the ones used for dining and the ones used for preparing sushi. These two types vary on the type of knife and chopsticks included.

Sushi sets that are for dining usually comprise of two bowls, two pairs of chopsticks and two bowls. These dishes are basically square shaped with rounded edges. They are also raised along the edges for sauces and liquids. Most are ceramic but there are also wooden and plastic varieties.

The small finger bowl included in sushi sets are for the soy sauce, pickled ginger, wasabi or other types of condiments. For the chopsticks included in sushi sets, these are Japanese styled and the ends taper to a point. These are oftentimes made from lacquered wood. For lower end sushi sets, they have plastic chopsticks instead.

Dining sushi sets have large serving bowls for the rice. These may be bundled with saki jugs and pairs of saki glasses. There are also sushi sets that have small curved wood pieces where you can rest your chopsticks if you re not using them. Good sushi sets suitable for two costs $30 to $60. For the luxury sushi sets, they cost more than $200.

Sushi sets that are geared for sushi preparation have a whole batch of utensils. These are different from the ones used for dining. Basic sushi sets have a rolling mat, ride paddle and sometimes, cooking chopsticks, tubs for preparing rice, special sushi knives and omelet pans. Rolling mats with sushi sets are called makisu . These are made from bamboo and are tied together using a string. This is for shaping makizushi rolls and for draining wet foods like tofu.

Sushi rice paddles or the shamoji are very flat paddles utilized for preparing and serving rice. These are usually made from plastic or wood. The good varieties feature non stick surfaces.

For larger sushi sets, cooking chopsticks are often times included. These are actually longer than the traditional dining chopsticks. Most varieties are made of wood and have an increased grip. This prevents warping during high temperatures.
A hangiri or a special rice tub utilized for the preparation of sushi rice. There are only a few sushi sets that have this – only the higher end sushi sets have them. You ll know if it s a good hangiri if it is made from cypress wood and it is bounded with copper. Rice is cooked in another vessel and just transferred to the hangiri . Here, the sugar, vinegar and salt can add flavor to sushi rice.

There are several types of sushi knives. Sushi sets usually have a nakiri bocho or a small vegetable knife. This is generally used for cutting sushi. There are also sushi sets that have an amakiyakinabe or a small yet rectangular pan for preparing eggs to the omelets of sushi dishes. Since Japanese omelets have a rolled shape, the omelette should be rectangular which is why a special pan is necessary.

Kitchen sushi sets with a basic mat and paddle can cost around $20. For sushi sets with a pan, rice tub and decent knife, it costs around $400 and up.
